Meal Plan for Jan. 24-30th

Here's this week's meal plan if you're following along. Monday's dinner idea comes right from the Pioneer Woman's site. I LOVE her Marlboro Man sandwich.

Monday - "Marlboro Man" Sandwich
Tuesday - Pork Tenderloin & Rice
Wednesday - Spicy Baked Mexican Lasagna (recipe post coming this afternoon)
Thursday - Salmon Cakes
Friday - Mediterranean Risotto
Saturday - Chicken Quesadillas
Sunday - Stacked Meatloaf

Meal Plan for August 16-22

I've been slacking off in the meal plan posting. It's been a crazy, hectic summer. Trips to my parent's, the zoo, visitors at our house, preparing for baby and the heat... omg the heat! But I realized I need to get back in the habit for two reasons, 1. Juniour is going to through us off course for a while so until we get our family routine re-established I need to be organized wherever I can be; and 2. my oldest starts school in the fall and I want to plan some great lunch and dinner (leftovers for lunch!) ideas ahead of time and try them out to see what she'll eat!

Here is this week's plan. It's pretty basic, my husband has the next 10 days off and in that time we need to paint the nursery, paint the furniture we bought for my youngest daughter's room, move furniture into the nursery, and get ready with little things like packing the hospital bag and whatnot. I needed a week where dinner was a no-brainer.

Mac & Cheese - done on stove top: macaroni, velveeta, diced tomatoes from the garden... c'est tout!
Steak & Potatoes
Tacos & Mexican Rice - cheating on this one and buying a kit. Thank you Old El Paso!
Chicken Parmigiana
Meatballs & Mashed - frozen italian meatballs simmered in BBQ sauce with mashed potatoes
Pork Tenderloin & Rice
Roast Beef with Roasted Potatoes & Carrots - crockpot cooking at it's best!

Weekly Meal Plan - May 17-23

As I said in my last post, this weekend I asked twitter what they'd like to see more of on my blog. I got some great requests and suggestions. One of them came from @jyetman. She read the post I did a while back on Meal Planning and wanted to see my meal plan every week. As a busy working wife and mother, having a plan to follow that had recipes to go with it is something she could really use. And I'm sure she's not the only one!

So I'm happy to share my family's meal plan with you all if anyone wants to follow it.



I base my week around our schedule and my shift-working husband's hours, so feel free to switch meals around (or for easier options for your lifestyle, like take-out pizza as opposed to homemade) so it better suits your schedule. I'm going to post a PDF of this week's schedule as well as a PDF of a blank meal plan that you can use if you want to move meals around or simply create your own!

I have some of these recipes up already and I'm working on getting the missing ones posted.
